Dark Chocolate Health Benefits: Show Me the Chocolate

If you consider yourself to be a “chocoholic,” there is some beneficial news for you: some chocolate is not only not as unhealthy as previously suggested, but numerous doctors now actually inspire the populace to devour it. One specific type of chocolate can be beneficial to your gums, eyes, heart, arteries and even your entire immune system. It can also help lower cholesterol levels and balance both blood pressure and blood sugar. However, before you run out to buy candy bars in bulk, know that not just any type of chocolate will yield such benefits.

Dark chocolate, created from natural cocoa beans, has been recommended for consumption even up to three times a day. This is because the cocoa bean is the food with the highest levels of antioxidants ever, which protect the body from oxidative stress involved with aging. Other foods, such as red wine, tea, and select few fruits and vegetables also offer similar health benefits, but cocoa still tops them all when it comes to the sheer number of antioxidants. These antioxidant compounds are called flavanols, which presumably give dark chocolate its health benefits.

Quality Chocolate

Chocolate is made from cocoa pods grown on the Theobroma cacao tree, a small evergreen native to the tropical regions of South America. It was so highly prized it was called ? God?s food? The secret to the best quality chocolate is in its amount of cocoa solids (a mixture of cocoa mass and cocoa butter).

The cocoa bean develops its aroma during fermentation and gives the beans their familiar chocolate taste. The fruit pulp containing the cocoa beans is poured into a fermenting tub or placed between banana leaves. Fermentation begins at 100 -120°F.

After harvesting the cacao pods (which contain the cacao beans) the pods are crushed and left to ferment and dry for about six days. Then the beans are removed from the pods and left to further dry. Quality chocolate demands this slow drying process.

Some chocolate manufacturers prefer to buy beans; others opt for chocolate mass. The beans are heated to 70 C and pressed to extract the cocoa butter (48-51 percent), which is clarified, becoming yellow and clear. At this stage, lecithin is added to make the mass malleable.

Traditional American chocolates are even lighter and sweeter than Belgian and Swiss chocolates, and have more pronounced and identifiable flavors.

Americans have a sweeter and lighter palate than most Europeans when it comes to their chocolate, but in recent years the American palate has been changing. The nouvelle American chocolate is French-inspired and is thus darker and less sweet. It also has less pronounced flavor, being more subtle and harder to identify. Most nouvelle American chocolates are shell-molded rather than enrobed.
